I have read some skinning articles that say to leave the saddle when fleshing certain species like muskrat. What is the saddle?

Thin red membrane starting under the shoulders.Just scrape the small globs of fat from under it and leave the red membrane.Mink also have it.

Actually, any of the red membrane that has fat underneath it can be safely scraped away. But you should stop scraping off the membrane when there is no longer any fat under it.
